Directions
Vichyssoise is a French thick soup made of boiled and puréed leeks, onions, and potatoes. What I like the most about this recipe is that it can be made ahead of time, as the flavors will only get better as the soup chills in the fridge. This recipe was inspired by “Vichyssoise de alho francês com avelãs torradas, cebolinho e ovas de truta” by José Avilez – an AMAZING Portuguese cooker.
