Vichyssoise is a French thick soup made of boiled and puréed leeks, onions, and potatoes. What I like the most about this recipe is that it can be made ahead of time, as the flavors will only get better as the soup chills in the fridge. This recipe was inspired by “Vichyssoise de alho francês com avelãs torradas, cebolinho e ovas de truta” by José Avilez – an AMAZING Portuguese cooker. Wash and prepare your vegetables: peel the sweet potato and the courgette. Cut all the vegetables into pieces;

In a saucepan, on medium heat, add the olive oil and sauté the vegetables without browning (about 2-4min);

Cover with water and season with salt;

When the vegetables are tender, add the almond milk. Grind everything and correct the seasonings if needed;

Let it cool down completely and put it in the fridge. Serve the soup cold with roasted almonds or hazelnuts and a drizzle of olive oil. You can also add chopped chives on top.
