100gr of chickpea flour
80mL of water
100mL of your favorite no-sugar-added vegetable drink I used oat and almond drink
1 small tomato
1 small onion
1 dash of black pepper
1 dash of salt
1 dash of paprika
1 tsp of turmeric
1 tsp of mixed herbs

The fabulous yellow color, the light, and fluffy texture, it’s perfectly ‘chickpea omelet’ to me! Chickpea flour has a very unique and intense flavor. Honestly, I was afraid that it will taste bad, but it turned out to be pretty good!  They’re a delicious high protein meal that will keep you full for a long time. They’re incredibly easy to make and you can add any of your favorite ingredients like mushrooms, peppers, spinach, or onions, vegan cheese…  How do like to fill your omelets? Steps

Wash and finely slice the onion and the tomato;

In a bowl, add the water, vegetable drink, and chickpea flour and whisk it very well making sure there are no lumps.

Add the rest of the ingredients until a thick batter is formed;

Heat a nonstick p frying pan on medium heat. When it´s hot, add the olive oil;

Pour around 100mL of the batter into the frying pan. Swirl it around making sure that the omelet isn’t too thin (or it will break).
After 3-5min, carefully loosen up the omelet with a spatula and flip the omelet to the other side and cook for 3-5 more minutes until it is no longer soft in the middle. (Make sure there is no wet batter left in the center);

Repeat this process with the rest of the batter and filled the omelet with whatever you want! I sauteed some vegetables, and vegan cheese.
