1/2 apple
1 tbsp of coconut sugar
1/3 tsp of vegan butter

This Apple Oatmeal is topped with caramelized apples and crunchy pecans for an irresistible, healthy breakfast that’s much more decadent than it looks.

Dice your apples into bite-sized pieces. Set it aside.

In a small saucepan, combine oats, 2/3 of the diced apples, non-dairy milk, cinnamon, and salt. Simmer until liquid has absorbed into the oats, stirring frequently to prevent burning, for about 8-10 minutes. Optionally, add maple syrup to taste.

Caramelized Apples

Meanwhile, in a separate small saucepan, melt the butter over medium heat. Add the diced apple chunks and coconut sugar. Cook for a few minutes, stirring occasionally until the sugar has melted and formed a caramel-like sauce on the apples.

Serve the oatmeal immediately, topped with the caramelized apples and topping of your choice.
