Ingredients

150gr of carrots

2 oranges

3 bay leaves

1 tsp of ground thyme

4-5 sheets of filo pastry

olive oil

2 tbsp of your favorite syrup(I used mapel syrup)

2 tbsp of sesame seeds
Directions
People love this as a nibble, starter or side, and are always surprised if you use different colored heritage carrots – pink, purple, yellow . . . whatever you like! Besides, you can serve the cigars with any sauce you like. (I used the leftovers off my bechamel sauce from my Lasagna recipe). Pell the carrots, chop them into sticks and cook them in a pan of fast-boiling salted water for 10 minutes (or until tender), then drain; |

In an empty pan, finely grate half the orange zest and add the orange juice, the bay, thyme, and a good pinch of sea salt; |

Cook it on medium heat until syrupy, folding the carrots back into the glaze to coat. Leave to cool; |

Preheat the oven to 200ºC; |

One by one lay out the filo sheets, rub them with olive oil, then cut lengthways into 3 strips. Place a carrot at the bottom of each and roll up like a cigar, squeezing lightly to seal. Repeat this process with the remaining carrots; |

Place all the cigars on a baking tray and brush them with a little bit of olive oil; |

Roast the cigars for 20 minutes, or until lightly golden and crisp; |

Finish it with a drizzle of syrup and sesame seeds. |
