1 medium onion

1 clove garlic

100gr of minced soy

50gr of red wine

1/2 tsp of cumin

210gr of tomato pure

1/2 medium leek

1 tbsp of oregano

1 dash of salt

1/2 tsp of black pepper

2tbsp of olive oil
Directions
A velvety-smooth and rich sauce that will knock your socks off! It doesn’t take a lot of ingredients (or a lot of money) to make a Bolognese recipe. What it does take, though, is patience for the sauce to achieve the ideal authentic texture. Is super easy and a true Italian classic.

In a pan add the soy mince and 600mL of water. When it starts to boil, cook it for 10mins with the lid open; |

Meanwhile, peel and finally chop the onion, leek and garlic; |

Drain the soy mince to a bowl and wash it with cold water; |

In a large pan, add the olive oil, onion, leek, and garlic and cook it on medium-high heat; |

Squeeze the water out of the soy mice using your hands and add it to the pan alongside with all the spices; |

After a few minutes, add the red wine; |

After 5 minutes, add the tomato pure and let it cook on low heat for 15min (or more, if needed) with the lid on. Get that depth of flavor by cooking the sauce very gently until it’s super-rich and done! You can serve this with cooked pasta (I recommend using spaghetti) or with a salad. |
